Understanding restaurant BEP
Contribution margin per portion
Contribution margin = selling price − variable cost per portion (ingredients + packaging). This is the part of each portion available to cover fixed costs and generate profit.
BEP = fixed cost ÷ contribution margin
Break-even (BEP) in portions = total monthly fixed cost divided by contribution margin per portion. Selling above this starts profit; below it means loss.
Payback from monthly profit
If the sales target is above BEP, there's monthly profit. Estimated payback = total startup capital ÷ monthly profit. The higher the profit, the faster capital returns.

How much capital to open a cafe?
It varies a lot by size, location, and concept. Main components: renovation/interior, kitchen equipment & coffee machines, furniture, initial stock, and permits. Enter each component in the calculator to see your total startup capital.
How do I calculate restaurant BEP?
BEP (portions) = total monthly fixed cost ÷ contribution margin per portion. Contribution margin = selling price − variable cost per portion. Example: fixed cost Rp15M, margin Rp18,000/portion → BEP ≈ 834 portions/month, about 28/day.
How long is payback for a food business?
It depends on startup capital and monthly profit. Estimate = capital ÷ monthly profit. If capital is Rp100M and profit is Rp10M/month, payback is about 10 months. The calculator computes this automatically if your sales target is above BEP.
What are fixed and variable costs?
Fixed costs don't change with sales: rent, fixed salaries, base electricity, internet. Variable costs rise and fall with sales: raw materials and packaging per portion. They're separated so BEP is accurate.
Why does it say not yet profitable?
If your target portions are still below BEP, sales haven't covered fixed costs, so it's still a loss. The calculator deliberately doesn't show payback time in this case. Raise your sales target, price, or cost efficiency to start profiting.
