Understanding capacity & revenue

Table turnover (seat turnover)

Turns per seat = (operating hours × 60) ÷ dining time per guest. The faster guests finish, the more turns and the larger the daily guest capacity.

Capacity × occupancy = realistic guests

Theoretical capacity is rarely full. Multiply by realistic occupancy (usually 60–70% blending peak and quiet) for a more reasonable guest estimate.

Revenue = guests × average spend

Daily revenue = realistic guests × average spend per guest. Multiplied by operating days per month gives an estimated monthly revenue. The calculator also shows 50/70/90% scenarios for a range.

FAQ

Frequently asked questions

How do I calculate a restaurant revenue target?

Compute table turns (hours × 60 ÷ dining time), multiply by seats for daily guest capacity, multiply by realistic occupancy for real guests, then by average spend per guest for daily revenue. Multiply by operating days for monthly revenue.

What is seat turnover?

Seat turnover is how many times one seat is filled by different guests in a day. Example: open 10 hours with 60-minute average dining → 10 turns/seat. The faster the turnover, the higher the potential guests and revenue.

What's a realistic occupancy for a restaurant?

Restaurants are rarely 100% full throughout opening hours. A realistic blended figure is generally 60–70%. This calculator shows 50/70/90% scenarios so you can compare conservative to optimistic potential.

Will this estimate definitely be achieved?

No. It's a potential estimate based on your assumptions. Real revenue is affected by location, day/weather, promotion, service quality, and competition. Use it as a target and picture, not a promise.

How can I raise revenue at the same capacity?

Some ways: speed up table turnover (without hurting comfort), raise average spend via menu design and upselling, and lift occupancy via promotion and online presence. The Omset Laris team can help with a website, online menu, and ads.

Omsetlaris Services

You have the numbers. Now the system.

The calculator here helps you decide with numbers. Running a restaurant or cafe day to day takes a system — that's where we work. We build websites, POS systems, online/QR menus, and operations systems for restaurants, cafes, and modern eateries.

Restaurant website

Profile, menu, location, and gallery that draw customers to visit or order.

POS & till system

Transactions, ingredient stock, and sales reports tracked automatically — not in a notebook.

Online & QR menu

Customers scan a QR at the table to view the menu and order themselves, cutting queues and wrong orders.

Operations system

Daily revenue reports, best-selling items, and data you can actually decide on.

The consultation is free with no obligation. If it turns out you don't need a system yet, we'll say so.
