Understanding capacity & revenue
Table turnover (seat turnover)
Turns per seat = (operating hours × 60) ÷ dining time per guest. The faster guests finish, the more turns and the larger the daily guest capacity.
Capacity × occupancy = realistic guests
Theoretical capacity is rarely full. Multiply by realistic occupancy (usually 60–70% blending peak and quiet) for a more reasonable guest estimate.
Revenue = guests × average spend
Daily revenue = realistic guests × average spend per guest. Multiplied by operating days per month gives an estimated monthly revenue. The calculator also shows 50/70/90% scenarios for a range.

How do I calculate a restaurant revenue target?
Compute table turns (hours × 60 ÷ dining time), multiply by seats for daily guest capacity, multiply by realistic occupancy for real guests, then by average spend per guest for daily revenue. Multiply by operating days for monthly revenue.
What is seat turnover?
Seat turnover is how many times one seat is filled by different guests in a day. Example: open 10 hours with 60-minute average dining → 10 turns/seat. The faster the turnover, the higher the potential guests and revenue.
What's a realistic occupancy for a restaurant?
Restaurants are rarely 100% full throughout opening hours. A realistic blended figure is generally 60–70%. This calculator shows 50/70/90% scenarios so you can compare conservative to optimistic potential.
